About this produce

Garden egg (Solanum aethiopicum) is a small, round African eggplant that comes in white, green, and purple varieties. Unlike Western eggplant, it is firmer and slightly bitter when raw, with a flavor that mellows beautifully when cooked. It is rich in dietary fiber, antioxidants, and minerals — and nearly impossible to find fresh outside of African specialty markets.

Common uses

Cooked into garden egg stew or sauce with tomatoes, peppers, onions, crayfish, and smoked fish — then served over rice or yam. Also eaten raw as a snack alongside groundnut (peanut) paste. The white variety is especially prized for its mild, slightly sweet taste when eaten fresh.

Cultural importance

In Igbo culture, garden eggs are a traditional symbol of welcome — offered to guests as a sign of hospitality and goodwill. They are a staple vegetable across Nigeria, Ghana, Cameroon, and much of West Africa. Finding fresh garden eggs locally in Minnesota is a rare opportunity that Shining Lights Farm makes possible.

Seasonal availability

Garden eggs are warm-season produce and are typically harvested from July through September. Fresh availability is seasonal and quantities are limited. Contact the farm to check current stock and place your order.
